Ingredients to make Soya Chaap Masala
Soya Chaap Sticks – 10-12
Curd – 1/2 cup
Onion – 2
Tomato – 4
Ginger-garlic paste – 1 tsp
Turmeric – 1 tsp
Red chili powder – 1/2 tsp
Garam masala – 1/2 tsp
Bay leaf – 1
Cinnamon – 1 inch piece
Cardamom – 2
Cumin powder – 1/2 tsp
Kasuri fenugreek – 1 tsp
Coriander powder – 1 tsp
Whole cumin – 1 tsp
Cloves – 4-5
Butter – 1 tsp
oil – as required
salt – as per taste

How to make Soya Chaap Masala
To make Soya Chaap Masala, first of all take Soya Chaap and soak them well in water. After this cut the pieces of soya chap. Keep the pieces slightly bigger so that it will be easier to fry. Now put oil in a pan and heat it. When the oil becomes hot, add pieces of soya chap and deep fry them. When the color of the chap turns golden and they become crispy, then turn off the gas and take them out in a vessel.

Now add curd, half teaspoon turmeric, red chilli powder, garam masala and salt as per taste to the fried soya chaap, mix them well and cover the utensil and keep the chaap to marinate for about half an hour.
Now take another pan and heat 2 tbsp oil in it. After the oil is hot, add finely chopped onion, ginger-garlic paste and fry the onion till it becomes light golden. After this, add chopped tomatoes to it, mix and let it cook till it becomes well salted. After this turn off the gas. When this masala cools down, grind it with the help of a mixer to make a paste and keep it aside.

Now put 2 tbsp oil and 1 tsp butter in the pan and heat it. After this add bay leaves, cinnamon, cloves, cumin seeds and fry them. When the aroma starts coming from the spices, add all the remaining spices and mix them and then sauté. When the spices are well roasted, add onion-tomato paste to it. Now let the spices cook on medium flame for 5-7 minutes.

When the gravy starts leaving oil, add the marinated masala soya chaap and mix it well with the gravy and cook for 2-3 minutes. After this add 1 cup of water and mix it. Now cover the pan and let the soya chaap cook on medium flame for 15 minutes. During this, keep stirring the arc in between. Finally, add kasoori fenugreek to it and turn off the gas. Flavorful soya chaap masala is ready. Serve it with roti or naan.
